Every Sunday in Huaraz there is a typical food fair in Jose Olaya street (the only street that survived from the old city after the earthquake of 1970). You should try pachamanca - it is a huge dish with meat of sheep, potatos, green beans, corn, tamal and humita (both made of ground corn but one is salty and the other sweet). The one I had cost 7 soles. 

And then if you still have space (I guarantee you won`t...)you can have for desert mazamorra (kind of jelly) of pumpkin or of melocoton (a local type of white peach).
